Cooking: Wendy's Famous Kale Salad


 My sister-in-law, Wendy Bergquist Curran, makes the best Kale Salad.  Kale is also known as borecole and is a nutritional powerhouse.





Here is Wendy's salad recipe:

1 bunch of kale, (approx. 1lb ) finely chopped with stems removed.
1/2 lemon
1 avocado (cut up into small square pieces)
1/2 cup Feta cheese (crumbled)
1/2 cup toasted, slivered almonds
1 cup cherry tomatoes (preferably teardrop)
1/2 cup dried cranberries 
Squeeze lemon over kale and massage greens with hands to break down the leaf (approx 3 to 5 minutes)
Add avocado and toss well.
Add dressing and toss.
Add remaining ingredients and enjoy!! ❤️

Dressing 
1/4 cup lemon olive oil
1/4 cup aged balsamic vinegar
1/8 cup honey
Salt and pepper to taste
Whisk together very well
